This is also the recipe that really got me into cooking in the first place. During the pandemic, I was craving Japanese curry a lot but there weren't any places around me that served it--saw Kenji Lopez-Alt's video on Youtube and realized it wasn't that difficult to make... And fast forward to a couple months later and I'm trying to create multiple different dishes that I thought were impossible for me to make.
I like mine a lot spicier so I usually add more chilies and then a final sprinkle of togarashi on top.
